TWO local business partners are working with a super food that is "freakishly high" in antioxidants, surpassing the humble blueberry benchmark by a mile.
Peter Faith and Bente Saugbjerg from Oz Tukka, Redhead, aim to deliver products that capitalise on the exotic flavours of Australian food.
The Davidson plum is tart, but contains more antioxidants than any other fruit.
It is just one of many ingredients that are incorporated into Oz Tukka's spices, oils and gluten-free muffin mixes.
These are delivered directly to shops such as Jesmond Fruit Barn and Growers Best, but you will not find them in the major supermarkets, whose turnovers are too quick for niche products.
All of the ingredients for Oz Tukka's products are sourced in the wild by Aboriginal communities.
While their market may be specific, Mr Faith said it was often people who loved to try new things in the kitchen who were their biggest buyers.
"Once they discover the flavours that are so unique, they tend to keep coming back," he said.
Oz Tukka will be holding a stall at Lake Macquarie council's Living Smart festival, which is sponsored by The Star.
The festival will include the latest trends in sustainable living, eco stalls, live music and food.
There will be free transport available via a ferry or bus, or park and ride as well as free valet bicycle parking.
