So I'm sitting there last week in one of those "monument to the cow" restaurants. You know the type: ill-lit room; Cuban leather chairs; where even the roquette is harvested from paddocks fertilised only with the finest powdered wagyu. For the frequent diner, they'll even bestow on you a shiny, monogrammed dagger with a whalebone handle – so you can impress your friends and acquaintances on each visit. Sort of like Augusta National, for the carnivores.
