It was the fourth time Central had captured the championship since 2009 and the third time they had beaten Regals for the silverware in that time.
Central finished second on the league ladder and lost 2-1 to minor premiers Regals in the major semi-final before securing another shot at their long-time rivals with a 4-0 victory against Tigers in the preliminary final.
They were keen to turn the tables from the outset, scoring through Kendall Steele with the game just eight minutes old.
Central remained in control of the match until the 54th when Holly Draganic evened the ledger for Regals.
But two minutes later Mikaela Coleman found the winner for Central.
Regals had the chance to send the game into extra-time when Kate Jenner looked likely at the death but her shot went begging.
Central captain Ashley Tsakissiris was named player of the match while Steele and Tigers player Kirsten Drysdale shared the player of the year honour.
Theo Gruschka scored in the dying stages to give Norths a 3-2 win over Gosford in the men’s grand final.
